Spiced Beignets

Spiced Beignets

Ingredients You'll Need


  • 2/3 cup milk
  • 2/3 cup water
  • 1/2 cup unsalted butter
  • 1 Tbsp. sugar
  • pinch of kosher salt
  • 1 3/4 cup all purpose flour
  • 6 large eggs
  • 1 cup sugar
  • 1/4 cup cinnamon

Cooking Instructions


  1. Place a large pot over high heat, combine the milk, water, butter, sugar, and salt and bring to a boil. Lower the heat down to medium and add the flour, continuously stirring with a rubber spatula to keep the mixture from clumping. Continue to cook while stirring for about 3 minutes until mixture pulls away from the sides and a film forms on the bottom of the pot. 
  2. Transfer the dough to the bowl of a stand mixer with a paddle attachment. Mix on medium speed until the dough has cooled to room temperature. Lower the speed and add the eggs one at a time. Allowing each egg to fully incorporate and scraping down the sides after each egg. The mixture should be shiny and not too thick. If the mixture is not shiny, add another egg. 
  3. Using a small scoop, place tablespoon sized portions of dough on a greased baking sheet, leaving about 1 inch between each piece. Cover the baking sheet with plastic wrap and refrigerate for at least 2 hours. Set up a deep fryer or fill a large pot with 4 inches of oil and set on high until the oil as reached 375 degrees Fahrenheit. Working in batches, fry the dough until golden brown all over, about 60 seconds on each side. Drain on paper towels over a wire rack. 
  4. Combine the cinnamon and sugar, and roll the warm beignets in the sugar mixture before serving.
