Mustard Glazed Lamb Rack with White and Black Bean Corn Relish
Makes 2 servings
Cooking Instructions
- 1 16-18 cut lamb rack
- 2 Tbsp. coarse grain mustard
- 3 Tbsp. maple syrup
- 1 Tbsp. apple syrup
- 1 tsp. ground black pepper
- 1 tsp. Brown Sugar
- 1 cup Lemon Juice
Relish
- 1 cup black beans
- 1 cup white beans
- 1/8 cup red pepper
- 1/8 cup green pepper
- 1 cup roasted cut corn
- 1 cup cilantro
- 1/8 cup balsamic vinegar
- 1 cup olive oil
- Combine all of the ingredients except the lamb in a stainless steel bowl.
- Set aside.
- Sear the lamb rack in a heavy saute pan, then coat the lamb rack with this mixture.
- Pre-heat oven to 375 degrees. And roast until done (about 20 minutes medium rare).
- Combine all the ingredients for the relish together and allow to marinate for 1 hour before serving.
