Mustard Glazed Lamb Rack with White and Black Bean Corn Relish

Makes 2 Servings

Cooking Instructions

  • 1 16-18 cut Lamb Rack
  • 2 Tbsp. coarse grain Mustard
  • 3 Tbsp. Maple Syrup
  • 1 Tbsp. Apple Syrup
  • 1 tsp. ground Black Pepper
  • 1 tsp. Brown Sugar
  • 1 cup Lemon Juice
Relish
  • 1 cup Black Beans
  • 1 cup White Beans
  • 1/8 cup Red Pepper
  • 1/8 cup Green Pepper
  • 1 cup roasted Cut Com
  • 1 cup Cilantro
  • 1/8 cup Balsamic Vinegar
  • 1 cup Olive Oil
 
  1. Combine all the Ingredients except the lamb in a stainless steel bowl.
  2. Set aside.
  3. Sear the lamb rack in a heavy saute pan,  then coat the lamb rack with this mixture.
  4. Pre-heat oven to 375deg. And roast until done (about 20 minutes medium rare). carve and serve.
  5. Combine all the ingredients for the relish together and allow  to marinate for 1 hour before serving.
