Cooking Instructions

 

  • 1 16-18 cut lamb rack
  • 2 Tbsp. coarse grain mustard
  • 3 Tbsp. maple syrup
  • 1 Tbsp. apple syrup
  • 1 tsp. ground black pepper
  • 1 tsp. Brown Sugar
  • 1 cup Lemon Juice


Relish

  • 1 cup black beans
  • 1 cup white beans
  • 1/8 cup red pepper
  • 1/8 cup green pepper
  • 1 cup roasted cut corn
  • 1 cup cilantro
  • 1/8 cup balsamic vinegar
  • 1 cup olive oil

 

  1. Combine all of the ingredients except the lamb in a stainless steel bowl.
  2. Set aside.
  3. Sear the lamb rack in a heavy saute pan, then coat the lamb rack with this mixture.
  4. Pre-heat oven to 375 degrees. And roast until done (about 20 minutes medium rare). 
  5. Combine all the ingredients for the relish together and allow to marinate for 1 hour before serving.
