Ingredients You'll Need

 

  • 3 racks of lamb (full racks, bones frenched and cut into 1-bone chops)
  • 1 1/2 cups mint leaves
  • 1/4 cup pine nuts
  • 6 cloves fresh garlic
  • 1/3 cup olive oil
  • 1/4 cup parmesan cheese
  • Salt and pepper to taste


Cooking Instructions

 

  1. Combine all ingredients into food processor and process until it has a pasty consistency.
  2. Rub lamb chops evenly with pesto (paste) overnight place wrapping them tightly with plastic wrap.
  3. Grill Lamb Chops or Sauté in pan over high heat, cook till desired temperature.
